Basic Information: Chia seeds contain around 40% carbohydrates; of these, 30% is insoluble fiber, 3% is soluble fiber, and the rest are essential starches. In an aqueous medium, the seed is surrounded by a copious mucilaginous polysaccharide. When a tablespoon of chia is mixed with water and allowed to rest for a few minutes, it forms a solid gel; this reaction is due to the soluble fiber in the seed.
