Product: Huacatay (Tagetes minuta)
Basic Information: Known as huacatay (also huatacay), Tagetes minuta is an aromatic herb that grows in the three regions of Peru (the Coast, the Highlands, and the Jungle), in the high valleys of Bolivia, and in Ecuador, in the inter-Andean valleys. Outside these regions, it is not a common ingredient and is hard to find. Its aroma is very intense, a mix of mint, basil, lemon, and tarragon. The tiny orange dots responsible for its fragrance are located on the edges of the leaves, where its essential oils are concentrated. In Peruvian cuisine, it is used as a condiment in traditional dishes such as ocopa a la arequipeña, pachamanca, and seco norteño, among others. It also pairs well with meats, potatoes, and stews and is delicious with seafood. For sauces, only fresh leaves are used, either ground or blended with oil.

Properties: Huacatay can be used as a pesticide (nematicide). It is attributed medicinal properties such as digestive, carminative, and anti-abortive. An infusion of its leaves is used to relieve gastric pain, and a decoction of its fresh flowers and leaves is used to alleviate colds and bronchitis. An essential oil extracted from its leaves is used in perfumery and aromatherapy.
Main Functionality: It helps improve bile function and acts as a purifying agent for the liver. It can be consumed fresh or as an infusion. The plant contains no cholesterol, making it highly recommended for diets.
Secondary Functionality: Due to its mint-like characteristics, it serves as an excellent digestive aid because of its mentholated properties.
